Easy Chickpea Spinach Masala Recipe (Chana Palak Masala)

Chana Palak Masala is a wholesome and flavorful dish that combines protein-packed chickpeas with nutrient-rich spinach in a spiced tomato-based curry. Using Bold Food Crate's premium Curry and Garam Masala seasonings, this recipe is perfect for a quick weeknight dinner or meal prep. Serve it with Basmati rice or naan for a comforting and satisfying meal.

Ingredients:

  • 2 tbsp vegetable oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 1 tsp ginger, grated
  • 2 tbsp Bold Food Crate Curry Seasoning
  • 1.5 cups crushed tomatoes
  • 2.5 cups cooked chickpeas (or canned, drained, and rinsed)
  • 1/2 cup water
  • 100 g chopped spinach (about 2 cups)
  • 1 tsp salt (adjust to taste)
  • 1 tbsp Bold Food Crate Garam Masala blend
  • 1 tbsp lemon juice
  • 1/2 cup coconut milk

Preparation:

  1. Sauté the Aromatics: Heat the vegetable oil in a large skillet over medium heat. Add the diced onion and cook until it turns brown or golden, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

  2. Add the Spices: Sprinkle in Bold Food Crate Curry Seasoning and stir well, letting the spices bloom for 30 seconds.

  3. Create the Base: Pour in the crushed tomatoes and cook for 5 minutes, stirring occasionally, until the mixture thickens slightly.

  4. Incorporate Chickpeas: Add the cooked chickpeas and water. Stir to combine, then cover and simmer for 10 minutes to allow the flavors to meld.

  5. Add Spinach and Seasoning: Stir in the chopped spinach, salt, and Bold Food Crate Garam Masala. Cook for 3-5 minutes until the spinach wilts.

  6. Finish the Dish: Reduce the heat to low and stir in the coconut milk and lemon juice. Simmer for 2 minutes to bring everything together.

  7. Serve: Transfer the Chana Palak Masala to a serving bowl. Enjoy with Basmati rice, naan, or quinoa for a complete meal.

Tips:

  • For extra heat, add a pinch of chili powder or cayenne pepper with the Curry Seasoning.
  • Substitute kale or Swiss chard for spinach if desired.
  • This dish tastes even better the next day as the flavors deepen.
